Tustumena Smokehouse's artisanal methods highlight the spectacular flavor of our Bristol Bay Sockeye Salmon. They use only local hardwood, not manufactured pellets and open flame smokers to slowly bring up the temperature for a full 8 hours to produce that deep smoky flavor. This style of smoking limits production but maximizes the taste and quality of their product.
